Alain and Jérôme Pabiot , the son and grandson of Jean Pabiot, are 5th generation wine growers at Domaine des Fines Caillottes.
Driven by a great love of their vineyards and wines, they do their utmost to ensure that each of their bottles brings as much enjoyment as possible.
THE DOMAINE
The Domaine des Fines Caillottes, planted with the Sauvignon Blanc grape variety (known as “Blanc Fumé” in generations past), is cultivated with respect for tradition. They practice supervised vineyard disease protection and yield control. The domaine covers 28 hectares; it is situated on the best terroirs in the Pouilly-Fumé region, on vineyards located near famous villages such as Les Loges, Pouilly-sur-Loire, Soumard and Saint-Laurent-l’Abbaye.
The Domaine des Fines Caillottes is made up of 30 parcels, located on varied terroirs, usually of clay-limestone. The "caillottes", from which the Domaine gets its name, are found on the plateaus. Caillottes are a large concentration of white limestone pebbles. The slopes, often south or south-east facing, are predominantly limestone, with fossilized stones (known as marls with small oysters) and composed of ammonites and occasionally with flint.
THE WINES
This variety of terroirs, combined with careful mastery of fermentation, gives each one of our wines its great aromatic expression, its perfect balance and longevity.
Vinification, which marries recent techniques with traditional savoir-faire, is carried out in the Domaine’s underground cellars, in the heart of the village of Les Loges.
Our "Domaine des Fines Caillottes" Pouilly-Fumé is a blend of wines coming from a great variety of our terroirs, from different micro-climates and vines of various ages found on our Domaine. This very expressive wine, which often picks up awards, develops fresh fruit aromas (citrus, exotic fruit etc.) with good balance and length on the palate.
The "Cuvée Prestige des Fines Caillottes" is made with grapes from our oldest vines (some are 40 years old or more), located near the village of Les Loges, on clay-limestone terroirs that are very pebbly (sometimes up to 50% pebbles). The exceptional grape maturity obtained on this terroir, the very deep rooting of old vine stocks, and reduced yields make the wines produced from these old vines beyond compare. Often applauded in the specialist press, this Pouilly-Fumé combines complexity, minerality, elegance, with ripe fruit notes and a great fullness.
The "Cuvée Séduction" is aged for a year on the lees (fermentation yeasts), which endows it with a great deal of richness and fullness on the palate. Very fruity and silky, this exceptional Pouilly-Fumé elegantly expresses long-lingering ripe fruit aromas, with vanilla or gingerbread notes, and is often mentioned in the press for its aromatic complexity.
